1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
0.5 tbsp Ghee
1 clove Garlic, minced
1 tbsp Lemon Juice
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
During the last 5 minutes of the cauliflower steaming, add the green beans to the steamer basket to cook until crisp-tender.
While vegetables steam, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee, minced garlic, and a pinch of salt, then mash or blend until creamy.
