Preheat oven to 400°F and line a baking sheet with parchment paper.
Peel and dice the sweet potato into half-inch cubes, then toss with olive oil and a pinch of sea salt.
Spread sweet potatoes on the baking sheet and roast for 15 minutes.
While potatoes roast, stir together the cottage cheese, dried parsley, dried dill, and garlic powder in a small bowl.
Place the salmon fillet on the baking sheet and season with sea salt and black pepper.
Spread the herb-cottage cheese mixture evenly over the top of the salmon fillet.
Return to the oven and bake for another 12-15 minutes until the salmon is flaky and the sweet potatoes are tender.
In the final 2 minutes of cooking, quickly wilt the fresh spinach in a hot skillet with a tablespoon of water.
Serve the salmon alongside the roasted sweet potatoes and the vibrant wilted spinach.
