Sautéed chicken breast and whole wheat pasta tossed in a velvety garlic-herb butter sauce with wilted spinach and bright lemon.
INGREDIENTS
5 oz Chicken breast
1.5 oz Whole wheat pasta
1 tbsp Grass-fed butter
2 cloves Garlic
1 cup Baby spinach
1 tbsp Fresh parsley
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Lemon juice
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
While the pasta cooks, cut the chicken breast into bite-sized pieces and season with sea salt, black pepper, and dried oregano.
Heat a large skillet over medium-high heat and sauté the chicken until golden brown and cooked through, then remove from the pan and set aside.
In the same skillet, melt the grass-fed butter over medium heat and sauté the minced garlic until fragrant and slightly golden.
Add the baby spinach to the skillet and toss until just wilted, then return the cooked chicken and the drained pasta to the pan.
Finish by stirring in the fresh parsley and lemon juice, tossing everything together to coat in the herb butter sauce before serving.
