Satay Tofu with Peanut Sauce
Pan-seared tofu cubes drizzled with a creamy, aromatic peanut sauce and served with vibrant steamed broccoli for a satisfying crunch.
INGREDIENTS
8 oz Firm tofu
1 tbsp Creamy peanut butter
1 tbsp Tamari
0.5 tsp Maple syrup
1 tbsp Lime juice
1 tsp Sriracha
0.25 tsp Garlic powder
0.25 tsp Ground ginger
1 cup Broccoli florets
0.25 tsp Sesame oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Drain the tofu and press between paper towels for 10 minutes to remove excess moisture.
Cut the tofu into 1-inch cubes and season with sea salt and black pepper.
In a small bowl, whisk together the peanut butter, tamari, maple syrup, lime juice, sriracha, garlic powder, and ground ginger until smooth.
Heat sesame oil in a non-stick skillet over medium-high heat and sear the tofu cubes until golden brown on all sides.
While the tofu cooks, steam the broccoli florets in a steamer basket for 4-5 minutes until tender and bright green.
Reduce the skillet heat to low, pour the peanut sauce over the tofu, and toss gently until the cubes are evenly coated and the sauce is warm.
Serve the satay tofu immediately alongside the steamed broccoli.
