Seared Salmon with Garlic Spinach and Brown Rice
Pan-seared salmon fillet served over nutty brown rice and garlicky sautéed spinach, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
7.2 oz Salmon Fillet
0.75 cup Cooked Brown Rice
3 cups Fresh Spinach
1 tsp Olive Oil
2 cloves Garlic
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and pepper.
Heat half of the olive oil in a medium non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy.
Carefully flip the fillet and cook for another 2 to 3 minutes until the salmon is just opaque and flakes easily.
While the salmon rests, heat the remaining oil in another pan and sauté the minced garlic until fragrant.
Add the fresh spinach to the garlic and toss constantly for 1 to 2 minutes until just wilted.
Plate the warm brown rice and top with the sautéed spinach and the seared salmon fillet.
