Heat the olive oil in a non-stick skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until the crust is golden and crisp.
Place the seared chicken on the prepared baking sheet. Spoon the marinara sauce over the top and sprinkle with the mozzarella cheese.
Bake for 12-15 minutes or until the chicken reaches an internal temperature of 165°F and the cheese is bubbly.
While the chicken bakes, quickly sauté the zucchini noodles in the same skillet used for the chicken for 2 minutes until just tender.
Serve the crispy chicken parmesan over the warm zucchini noodles and enjoy immediately.
