PREPARATION
Heat the toasted sesame oil in a large non-stick skillet over medium heat.
Add the minced ginger and garlic to the pan and sauté for 30 seconds until fragrant.
Add the baby spinach and stir-fry quickly until the leaves are just wilted.
Gently place the cubed silken tofu into the pan and pour the egg whites over the top.
Cook the mixture slowly, using a spatula to gently fold the tofu and egg whites together until the whites are fully set but still tender.
Drizzle the coconut aminos over the scramble and stir one last time to incorporate.
