6.5 oz Wild Salmon Fillet
150g Sweet Potato
150g Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden.
Remove the salmon and add the remaining oil to the same pan, then sauté the green beans and minced garlic until the beans are tender-crisp.
