In a bowl, toss the potato cubes with the olive oil, half of the sea salt, and half of the smoked paprika.
Spread the potatoes on the baking sheet and roast for 20-25 minutes until golden and tender.
While the potatoes roast, heat a large stainless steel or cast iron skillet over medium-high heat.
Add the ground beef to the skillet, breaking it into small crumbles with a spatula as it browns.
Once the beef is mostly browned, add the diced yellow onion and red bell pepper to the skillet.
Sauté the mixture for 5 minutes until the vegetables are softened and the beef is fully cooked.
Stir in the garlic powder, remaining smoked paprika, sea salt, black pepper, and the roasted potatoes.
Garnish the skillet with freshly chopped parsley and serve immediately while hot.
