Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with fluffy mashed sweet potatoes and tender steamed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Wild Salmon Fillet
150g Sweet Potato, peeled and cubed
1 cup Fresh Green Beans
1 tsp Ghee
1 tbsp Fresh Lemon Juice
1/4 tsp Sea Salt
1/4 tsp Black Pepper
PREPARATION
Place the cubed sweet potato in a pot of boiling water and cook for 10-12 minutes until soft, then drain and mash until smooth with a pinch of sea salt.
Steam the green beans in a steamer basket over boiling water for 5-6 minutes until they are vibrant green and tender-crisp.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the ghee in a stainless steel or cast iron skillet over medium-high heat until shimmering.
Place the salmon in the skillet and sear for 4 minutes without moving it to develop a golden crust, then flip and cook for another 3 minutes.
Plate the salmon alongside the sweet potato mash and green beans, drizzling the fresh lemon juice over the fish just before serving.
