6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
0.5 tsp Ghee
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
Drain the cauliflower well and mash with the ghee and a pinch of sea salt until smooth and creamy.
While cauliflower steams, pat the salmon dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until tender-crisp and the garlic is toasted.
Serve the salmon over a bed of cauliflower mash with the garlicky green beans on the side.
