150 grams Sweet Potato
100 grams Green Beans
1 tsp Ghee
1 tbsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then boil in salted water for 10-12 minutes until tender.
Steam the green beans for 5-6 minutes until they are bright green and crisp-tender.
Drain the sweet potatoes and mash them with half of the ghee and a pinch of sea salt until smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily.
Serve the seared salmon over the sweet potato mash with the green beans on the side and a fresh squeeze of lemon juice.
