Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the Russet potato thoroughly, pierce it several times with a fork, and rub the skin with olive oil and a pinch of sea salt.
Place the potato on the baking sheet and roast for 45 to 50 minutes until the skin is crisp and the center is tender.
While the potato is roasting, heat a non-stick skillet over medium heat and add the ground turkey, garlic powder, remaining salt, and pepper.
Cook the turkey, breaking it into small crumbles with a spatula, until it is browned and cooked through, about 7-8 minutes.
Once the potato is done, slice it down the center and fluff the interior with a fork.
Stuff the potato with the cooked ground turkey and sprinkle the shredded cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese is completely melted and bubbly.
Remove from the oven and top with a generous dollop of Greek yogurt and freshly chopped chives.
