Increase the heat slightly and add the marinated chicken, cooking until the pieces are browned on all sides.
Stir in the rinsed rice, water, and the saffron-infused liquid.
Bring the mixture to a boil, then reduce the heat to low, cover tightly, and simmer for 15-18 minutes until the liquid is fully absorbed.
Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.
Garnish with freshly chopped cilantro and mint before serving.
