1 cup Cucumber

0.25 tsp Black pepper
1 cup Mixed greens
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Season the salmon fillet with half of the sea salt and black pepper, then roast for 12-15 minutes until the fish is opaque and flakes easily with a fork.
While the salmon cooks, prepare the dressing by whisking together the Greek yogurt, olive oil, lemon juice, chopped fresh dill, and the remaining salt and pepper in a medium mixing bowl.
Once the salmon has cooled slightly, use two forks to gently flake the meat into bite-sized chunks, discarding the skin.
Add the flaked salmon, diced cucumber, and finely diced red onion to the bowl with the dressing and toss gently until every piece is well-coated.
