Pan-Seared Steak with Garlic Herb Butter
Pan-seared sirloin steak basted in a fragrant garlic-herb ghee, served with crisp-tender roasted asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 cup Asparagus spears
0.5 tbsp Avocado oil
2 cloves Garlic
1 sprig Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking to reach room temperature, then pat it very dry with paper towels.
Season both sides of the steak generously with the sea salt and black pepper.
Heat the avocado oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side until a deep golden-brown crust forms.
Reduce the heat to medium and add the ghee, smashed garlic cloves, and fresh rosemary sprig to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melted herb butter for 2 minutes.
Transfer the steak to a cutting board and let it rest for 5-10 minutes to allow the juices to redistribute.
While the steak rests, toss the asparagus spears into the same skillet and sauté in the remaining juices for 4-5 minutes until tender.
Slice the steak against the grain and serve immediately alongside the buttery asparagus.
