1.5 cups Cauliflower florets
1 cup Green beans
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil

PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until bright green and crisp-tender.
While vegetables steam, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower to a bowl or food processor. Add the Greek yogurt and minced garlic, then mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon and serve immediately.
