INGREDIENTS
2 large Portobello mushrooms
7 oz Ground turkey
1 oz Feta cheese
1 cup Fresh spinach
0.5 tbsp Olive oil
1 clove Garlic
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Clean the portobello mushrooms with a damp cloth and gently remove the stems, then finely chop the stems for the filling.
Heat the olive oil in a skillet over medium heat and sauté the ground turkey until browned and fully cooked.
Add the chopped mushroom stems, minced garlic, and fresh spinach to the skillet, cooking for 3 minutes until the spinach is wilted.
Remove the skillet from the heat and stir in the dried oregano, sea salt, black pepper, and crumbled feta cheese.
Place the mushroom caps on the prepared baking sheet and fill each cavity generously with the turkey and cheese mixture.
Bake for 18 minutes until the mushrooms are tender and the filling is hot and slightly golden.
Garnish with freshly chopped parsley and serve immediately.
