Pan-Seared Salmon with Creamy Spinach and Brown Rice
Pan-seared wild salmon served over a bed of garlic-infused creamy spinach and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
1 cup Cooked Brown Rice
2 cups Fresh Baby Spinach
1.5 tbsp Heavy Cream
2 tbsp Grated Parmesan Cheese
2 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan.
In the same pan, add the remaining teaspoon of olive oil and sauté the minced garlic until fragrant.
Add the fresh baby spinach to the pan and cook until just wilted.
Stir in the heavy cream and grated parmesan, simmering for 1 minute until the sauce thickens slightly.
Plate the brown rice, top with the creamy spinach and the seared salmon, and finish with a fresh squeeze of lemon juice.
