Preheat your air fryer to 375°F (190°C).
In a food processor, combine the chickpeas, fresh parsley, garlic, ground cumin, ground coriander, sea salt, and black pepper.
Pulse until the mixture is coarse but well-combined, then add the egg whites, nutritional yeast, and hemp hearts.
Pulse a few more times until the mixture is uniform and holds its shape when pressed.
Form the mixture into 6 to 8 small balls or patties.
Place the falafel in the air fryer basket and lightly coat them with the extra virgin olive oil spray.
Air fry for 12-15 minutes, turning halfway through, until they are golden brown and crispy on the outside.
While the falafel cooks, whisk together the non-fat Greek yogurt, lemon juice, and tahini in a small bowl to create the drizzle.
Serve the warm falafel immediately with the lemon-tahini sauce drizzled over the top.
