Seared Salmon Fillet with Roasted Sweet Potatoes and Green Beans
Pan-seared salmon fillet served with tender roasted sweet potato cubes and garlic-rubbed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.9 oz Wild Atlantic Salmon
120g Sweet Potato, cubed
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes and trimmed green beans with half of the olive oil, minced garlic, salt, and pepper.
Spread the vegetables in a single layer on the baking sheet and roast for 20-25 minutes until the potatoes are tender.
While the vegetables roast, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the fillet and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
Remove from heat and drizzle the salmon with fresh lemon juice.
Serve the seared salmon alongside the roasted sweet potatoes and green beans.
