Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon paired with garlicky green beans and a velvety sweet potato mash, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
0.75 tbsp Avocado Oil
2 tbsp Non-fat Greek Yogurt
2 Garlic Cloves
PREPARATION
Peel and cube the sweet potato then boil in water until tender for about 12-15 minutes.
Drain the potatoes and mash with Greek yogurt and a pinch of sea salt until smooth and creamy.
Heat avocado oil in a pan over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 3-4 minutes until the center is opaque and the edges are flaky.
In the same pan sauté the green beans and minced garlic for 5 minutes until tender-crisp and fragrant.
Plate the salmon alongside the sweet potato mash and green beans then garnish with a fresh lemon wedge.
