Place the chicken in the skillet and sear for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F. Remove the chicken from the pan and set aside.
In the same skillet, add the cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until they begin to blister and release their juices.
Add the minced garlic to the skillet and sauté for 30 seconds until fragrant.
Lower the heat to medium and pour in the coconut milk, adding the remaining salt, pepper, and oregano while stirring to deglaze the pan.
Add the fresh baby spinach to the sauce and stir until the leaves are just wilted.
Return the chicken breast to the skillet, spooning the creamy tomato sauce over the top to coat.
Garnish with chopped fresh parsley and serve warm.
