Seared Salmon with Roasted Asparagus and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower purée with tender roasted asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
5.5 oz Salmon Fillet
1.5 cups Cauliflower florets
150g Asparagus spears
1/4 cup Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic
Salt and pepper to taste
Fresh lemon wedges
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the asparagus spears with half of the olive oil, salt, and pepper, then roast for 12-15 minutes until tender-crisp.
While the asparagus roasts, steam the cauliflower florets and garlic clove until very soft, about 10 minutes.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt, and blend until completely smooth and velvety.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Plate the cauliflower mash first, top with the seared salmon, and serve the roasted asparagus on the side with a fresh lemon squeeze.
