Scrub the Russet potato thoroughly, prick it several times with a fork, and rub the skin with olive oil.
Place the potato directly on the oven rack and bake for 45 to 60 minutes, or until the skin is crisp and the inside is tender.
While the potato is baking, heat a non-stick skillet over medium heat and add the ground turkey.
Cook the turkey until browned and cooked through, breaking it into small crumbles with a spatula.
Season the turkey with garlic powder, sea salt, and black pepper, then remove from heat.
Once the potato is finished, slice it down the center and gently fluff the interior with a fork.
Stuff the seasoned ground turkey into the potato cavity.
Top with a generous dollop of nonfat plain Greek yogurt and garnish with freshly chopped chives.
