Greek Yogurt Protein Cheesecake with Fresh Berries
Oven-baked Greek yogurt and vanilla protein cheesecake topped with a medley of plump, juicy fresh berries.
INGREDIENTS
1 cup Non-fat Greek Yogurt
12 grams Vanilla Whey Protein Isolate
1 large Egg White
2 tablespoons Almond Flour
0.75 cup Fresh Mixed Berries
0.5 teaspoon Coconut Oil
1 tablespoon Monk Fruit Sweetener
0.5 teaspoon Vanilla Extract
PREPARATION
Preheat your oven to 325°F and lightly grease a small 4-inch springform pan or oven-safe ramekin.
Stir the almond flour and melted coconut oil together in a small bowl until crumbly, then press firmly into the bottom of the pan to create a thin base.
In a separate mixing bowl, whisk together the Greek yogurt, vanilla protein powder, egg white, monk fruit sweetener, and vanilla extract until the mixture is completely smooth.
Pour the yogurt filling over the almond base and smooth the surface with a spoon.
Bake for 25 to 30 minutes until the edges are set but the center still has a slight jiggle.
Remove from the oven and let it cool to room temperature, then transfer to the refrigerator to chill for at least 2 hours.
Top with the fresh mixed berries just before serving.
