Seared Lean Beef Strips with Garlic Green Beans and Sweet Potato Mash
Tender pan-seared beef strips served alongside garlic-infused green beans and a velvety sweet potato mash.
INGREDIENTS
5 oz Top Sirloin Steak, sliced into strips
180g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed
2 tsp Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
Salt and black pepper to taste
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the potatoes and mash them with the ghee and a pinch of salt until smooth and velvety.
Season the beef strips with salt and black pepper.
Heat one teaspoon of olive oil in a large skillet over medium-high heat and sear the beef strips for 2-3 minutes per side until browned, then remove from the pan to rest.
In the same skillet, add the remaining teaspoon of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans to the skillet with a splash of water, cover, and steam for 4-5 minutes until tender-crisp.
Serve the seared beef strips over the sweet potato mash with the garlic green beans on the side.
