Pan-Seared Ribeye with Garlic Herb Butter
A succulent ribeye steak pan-seared to a perfect medium-rare, basted in a fragrant garlic-herb butter and served with crisp-tender roasted asparagus.
INGREDIENTS
4.25 oz Ribeye steak
0.25 tbsp Grass-fed butter
1 clove Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Asparagus
0.25 tsp Extra virgin olive oil
PREPARATION
Season the ribeye generously on both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until it begins to smoke slightly.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare.
During the last 2 minutes of cooking, add the butter, smashed garlic clove, rosemary, and thyme to the pan.
Tilt the pan and spoon the foaming herb butter over the steak repeatedly to baste.
Remove the steak from the pan and let it rest on a cutting board for 5-10 minutes.
In the same pan or a separate skillet, toss asparagus with olive oil and sauté for 4-5 minutes until bright green and tender.
Slice the steak against the grain and serve alongside the asparagus, drizzled with any remaining pan juices.
