Seared Salmon with Steamed Asparagus and Sweet Potato Mash
Pan-seared salmon served over a silky sweet potato mash with tender steamed asparagus, finished with a bright squeeze of lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
1 medium Sweet Potato
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
PREPARATION
Peel and cube the sweet potato, then boil in water for 12-15 minutes until very soft.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt.
Steam the asparagus spears for 4-5 minutes until they are bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Plate the salmon over the sweet potato mash and serve with the asparagus on the side.
