Seared Salmon with Garlic Spinach and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash and garlicky spinach, finished with a squeeze of lemon for a bright, zesty finish.
INGREDIENTS
6 ounces Wild Sockeye Salmon
250 grams Cauliflower florets
60 grams Fresh Spinach
2 teaspoons Extra Virgin Olive Oil
2 cloves Garlic
2 tablespoons Non-fat Greek Yogurt
1 teaspoon Ghee
PREPARATION
Steam cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, season the salmon fillet with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked through.
In a separate pan, heat the remaining teaspoon of olive oil and sauté the minced garlic until fragrant.
Add the spinach to the garlic pan and toss until just wilted, then remove from heat.
Drain the cauliflower and blend or mash with the Greek yogurt and ghee until smooth and creamy.
Plate the cauliflower mash, top with the garlic spinach, and place the seared salmon on top.
