1 cup Water Spinach
1 cup chopped Baby Bok Choy

PREPARATION
Pat the salmon fillet dry with a paper towel and season lightly with salt.
Heat a large non-stick skillet over medium-high heat with half of the sesame oil.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy.
Flip the salmon and cook for another 3 to 4 minutes until the fish is just opaque and flakes easily.
Remove the salmon from the pan and set it aside to rest.
Add the remaining sesame oil to the same skillet along with the minced garlic and ginger.
Toss in the eggplant cubes and sauté for about 4 minutes until they begin to soften and brown.
Add the water spinach and baby bok choy to the skillet, stirring constantly until the greens are wilted.
Pour the coconut aminos over the vegetables and toss to coat everything evenly.
