6.5 oz sashimi-grade salmon
0.25 cup cooked sushi rice
0.25 whole avocado
0.5 cup cucumber
2 sheets nori
1 tbsp rice vinegar
1 tsp coconut aminos
0.25 tsp sea salt

PREPARATION
In a small bowl, toss the cooked sushi rice with rice vinegar and sea salt until well combined and slightly sticky.
Slice the sashimi-grade salmon into long, thin strips approximately half an inch thick using a sharp knife.
Peel and slice the avocado into thin wedges and julienne the cucumber into matchsticks.
Place one nori sheet on a bamboo rolling mat and spread half of the rice thinly over the bottom two-thirds of the sheet.
Layer half of the salmon, avocado, cucumber, and fresh ginger across the center of the rice.
Firmly roll the nori from the bottom up, using the mat to maintain a tight cylinder, then repeat with the second sheet.
Slice each roll into six even pieces using a wet knife and serve with coconut aminos for dipping.
