PREPARATION
Pat the steak dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat with the avocado oil until it begins to shimmer.
Carefully place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare.
In the final 2 minutes of cooking, add the ghee, smashed garlic clove, rosemary, and thyme to the pan.
