200g Sweet Potato
2 cups Fresh Spinach
1 tbsp Extra Virgin Olive Oil
0.5 tbsp Ghee
2 cloves Garlic
PREPARATION
Peel and dice the sweet potato into small cubes and boil in a pot of water until tender, about 12-15 minutes.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a medium skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
