Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Peel and chop the carrots and parsnips into 1-inch chunks so they roast evenly.
In a small bowl, combine the smoked paprika, garlic powder, sea salt, black pepper, and dried thyme.
Place the chopped root vegetables on one side of the sheet pan, drizzle with 0.5 tbsp of avocado oil, and sprinkle with half of the spice mixture.
Pat the pork tenderloin dry with a paper towel, rub with the remaining 0.5 tbsp of avocado oil, and coat thoroughly with the remaining spice rub.
Place the pork on the other side of the sheet pan and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.
Remove from the oven and let the pork rest for 5-10 minutes before slicing into medallions to keep it juicy.
Serve the sliced pork alongside the roasted vegetables.
