YOUR SOLIN GENERATED RECIPE
Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky sautéed green beans and creamy mashed sweet potato, finished with a squeeze of bright lemon.
INGREDIENTS
5.5 oz Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until fork-tender.
Drain the potatoes and mash them until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until tender-crisp.
Plate the salmon alongside the sweet potato mash and green beans, serving with a lemon wedge if desired.
