Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon with a crisp skin served over creamy garlic cauliflower mash and tender steamed broccoli.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon Fillet
200 grams Cauliflower florets
150 grams Broccoli florets
2 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tablespoon Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until very tender, approximately 12 minutes.
Steam the broccoli florets in a separate steamer basket for 5-6 minutes until bright green and tender-crisp.
Drain the cauliflower thoroughly and blend or mash with the minced garlic, one teaspoon of olive oil, and a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is golden and the fish is cooked through.
Serve the salmon over the cauliflower mash with the broccoli on the side, finished with a bright squeeze of lemon juice.
