Seared Salmon with Steamed Green Beans and Mashed Cauliflower
Pan-seared wild salmon served over creamy mashed cauliflower and tender steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1.5 tsp Avocado oil
1 tbsp Nonfat Greek yogurt
1 tsp Lemon juice
Pinch of garlic powder, salt, and black pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until bright green and tender-crisp.
Pat the salmon dry with a paper towel and season both sides with salt, pepper, and garlic powder.
Heat avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a bowl and mash with Greek yogurt and a pinch of salt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve with green beans and a fresh squeeze of lemon juice.
