Pan-Seared Steak with Garlic Herb Butter
Pan-seared top sirloin basted in a fragrant garlic and rosemary ghee, served alongside crisp-tender roasted asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
1 cup Asparagus spears
1 clove Garlic
1 sprig Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the avocado oil.
Place the steak in the hot skillet and sear for 3-4 minutes until a deep golden crust forms.
Flip the steak and add the ghee, smashed garlic clove, and rosemary sprig to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melting garlic-herb ghee for another 3-4 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
While the steak rests, toss the asparagus into the same pan with the remaining herb ghee and sauté for 3-5 minutes until bright green and tender.
Slice the steak against the grain and serve immediately with the buttery asparagus.
