Season the diced chicken breast with sea salt and black pepper, then sauté until golden and cooked through.
Remove the chicken from the pan and add the remaining oil along with the minced garlic, grated ginger, peas, and diced carrots.
Sauté the vegetables for 3 minutes until tender-crisp, then push them to the side and crack the egg into the pan, scrambling until set.
Add the cooked brown rice, the cooked chicken, and the tamari to the skillet.
Toss everything together for 2-3 minutes until the rice is slightly crispy and heated through.
Remove from heat and garnish with fresh green onions before serving.
