Pan-Seared Salmon with Roasted Asparagus
Golden pan-seared salmon fillets paired with tender roasted asparagus, finished with a bright squeeze of lemon for a crisp and vibrant meal.
INGREDIENTS
6 oz Salmon fillet
1 bunch Asparagus
0.25 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Snap off the woody ends of the asparagus and place the spears on the prepared baking sheet.
Drizzle the asparagus with 0.5 tablespoon of olive oil and season with half of the sea salt and black pepper.
Roast the asparagus in the oven for 12 to 15 minutes until tender and slightly charred.
While the asparagus roasts, pat the salmon dry with a paper towel and season both sides with garlic powder and the remaining salt and pepper.
Heat the remaining 0.5 tablespoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until the internal temperature reaches 145°F.
Serve the salmon alongside the roasted asparagus and garnish with a fresh squeeze of lemon juice.
