Chicken Alfredo with Fettuccine
Pan-seared chicken breast and al dente fettuccine tossed in a velvety garlic-parmesan sauce for a comforting and creamy finish.
INGREDIENTS
5 oz Chicken breast
2 oz Fettuccine pasta
1 tsp Olive oil
2 cloves Garlic
2 tbsp Plain Greek yogurt
1 tbsp Grated parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente.
While the pasta cooks, season the chicken breast with sea salt and black pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden and cooked through.
Remove the chicken from the pan, let it rest for 5 minutes, then slice it into thin strips.
In the same skillet, reduce heat to low and sauté the minced garlic for 1 minute until fragrant.
Reserve 0.25 cup of pasta water, then drain the pasta.
Whisk the Greek yogurt and parmesan cheese into the skillet with the garlic, adding reserved pasta water 1 tablespoon at a time to create a smooth sauce.
Toss the cooked fettuccine and sliced chicken into the sauce until well-coated and garnish with fresh parsley.
