Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlic-infused green beans and a creamy sweet potato mash, finished with a bright squeeze of lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon
120 grams Sweet Potato
100 grams Green Beans
1 teaspoon Avocado Oil
20 grams Nonfat Greek Yogurt
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the sweet potato and mash thoroughly with the nonfat Greek yogurt until smooth and creamy.
Season the salmon fillet with a pinch of salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until the edges are golden, then flip and cook for another 3 minutes until opaque.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3-4 minutes until tender-crisp.
Plate the sweet potato mash and garlic green beans alongside the seared salmon and serve immediately.
