Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with crisp garlic-infused green beans and nutty brown rice, finished with a bright squeeze of lemon.
INGREDIENTS
6.5 ounces Wild Sockeye Salmon fillet
0.5 cup cooked Brown Rice
1 cup fresh Green Beans, trimmed
1.5 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
Fresh lemon wedge and sea salt to taste
PREPARATION
Prepare the brown rice according to package instructions or use pre-cooked rice and warm it through.
Pat the salmon fillet dry with a paper towel and season lightly with sea salt.
Heat 0.5 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 3-4 minutes until golden brown, then flip and cook for another 3 minutes or until desired doneness.
While the salmon cooks, steam the green beans for 3-4 minutes until tender-crisp.
In a separate small pan, heat the remaining 1 teaspoon of olive oil over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Toss the steamed green beans into the garlic oil and sauté for 1 minute to coat.
Plate the salmon alongside the brown rice and garlic green beans, finishing with a fresh squeeze of lemon juice.
