Pan-Seared Steak with Garlic Herb Butter
Tender top sirloin pan-seared to a succulent finish and basted with a fragrant garlic-herb ghee, served alongside crisp-tender roasted asparagus.
INGREDIENTS
6 oz Top sirloin steak
1 tsp Avocado oil
1 tbsp Ghee
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
10 spears Asparagus
0.5 tsp Lemon juice
PREPARATION
Pat the steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat avocado oil in a cast-iron skillet over medium-high heat until the oil is shimmering.
Place the steak in the hot skillet and sear for 3 to 4 minutes without moving it until a deep golden-brown crust forms.
Flip the steak and immediately add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melting herb ghee for another 2 to 3 minutes.
Remove the steak from the pan and place it on a cutting board to rest for at least 5 minutes before slicing.
While the steak rests, toss the asparagus spears into the same skillet and sauté in the remaining pan juices for 3 minutes until vibrant.
Finish the asparagus with a squeeze of lemon juice and serve immediately alongside the sliced steak.
