Baked Eggs with Roasted Tomatoes
Farm-fresh eggs and liquid whites baked until set with blistered cherry tomatoes, fragrant garlic, and salty feta for a vibrant and savory morning feast.
INGREDIENTS
2 large eggs
1 cup egg whites
1 cup cherry tomatoes
1 oz feta cheese
1 slice sprouted grain bread
1 tsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp fresh oregano
1 clove garlic
PREPARATION
Preheat your oven to 400°F (200°C).
In a small oven-safe skillet or ceramic baking dish, toss the cherry tomatoes and minced garlic with olive oil, sea salt, and black pepper.
Roast the tomatoes in the oven for 10-12 minutes until they are blistered and have released some of their juices.
Remove the dish from the oven and carefully pour the liquid egg whites over the roasted tomatoes.
Crack the two whole eggs directly onto the egg whites, spacing them evenly and keeping the yolks intact.
Sprinkle the crumbled feta cheese and fresh oregano over the top of the egg mixture.
Return the dish to the oven and bake for another 10-15 minutes, or until the whites are fully opaque and set, while the yolks remain slightly soft.
While the eggs finish baking, toast the slice of sprouted grain bread until golden brown.
Remove the eggs from the oven and serve immediately with the toast for dipping into the warm yolks.
