Seared Chicken Breast with Roasted Broccoli and Sweet Potato Mash
Pan-seared chicken breast and garlic-roasted broccoli served with a bowl of velvet-smooth sweet potato mash.
INGREDIENTS
5.5 oz Chicken Breast
130g Sweet Potato
150g Broccoli Florets
2 tsp Extra Virgin Olive Oil
1 clove Garlic
Sea Salt and Black Pepper to taste
1 Lemon wedge
PREPARATION
Preheat your oven to 400°F.
Peel and cube the sweet potato, then boil in a pot of water until tender, about 12 to 15 minutes.
Toss the broccoli florets with one teaspoon of olive oil, minced garlic, salt, and pepper on a baking sheet.
Roast the broccoli in the oven for 15 to 20 minutes until the edges are slightly charred and tender.
Season the chicken breast with a pinch of salt and pepper on both sides.
Heat the remaining teaspoon of olive oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until fully cooked.
Drain the sweet potatoes and mash them thoroughly until they reach a velvet-smooth consistency.
Plate the seared chicken and roasted broccoli over the sweet potato mash and serve with a fresh lemon wedge.
