While the potatoes roast, whisk together the remaining olive oil, lemon juice, lemon zest, minced garlic, rosemary, and thyme in a small bowl.
Remove the baking sheet from the oven and move the potatoes to one side.
Add the chicken breast, trimmed asparagus, and sliced zucchini to the sheet.
Brush the lemon-herb mixture generously over the chicken and vegetables.
Return the sheet to the oven and roast for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
Let the chicken rest for 5 minutes before serving to ensure it stays juicy.
