Heat the avocado oil in a large cast-iron skillet over medium-high heat.
Add the diced sweet potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are softened and golden brown.
Stir in the diced onions and bell peppers, sautéing for another 3-4 minutes until the onions are translucent.
Push the vegetables to the outer edges of the pan and add the ground sirloin to the center.
Break up the beef with a spatula and cook until browned and fully cooked through.
Season the entire mixture with smoked paprika, garlic powder, sea salt, and black pepper, tossing well to combine.
Create a small well in the center of the hash and crack the egg into it.
Cover the pan for 2-3 minutes until the egg white is set but the yolk is still runny.
Garnish with chopped fresh parsley and serve immediately.
