PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the carrot into thin rounds and chop the bell pepper into bite-sized pieces.
Toss the broccoli, carrots, and peppers on the baking sheet with 0.5 tbsp of olive oil and a pinch of the salt and pepper.
Roast the vegetables for 18 to 22 minutes until they are tender and slightly caramelized at the edges.
